¾ cup peanut butter
½ cup butter (at room temperature)
1 ¼ cup brown sugar
3 tablespoons of milk
1 tablespoon Ballard Extracts' Vanilla Extract
1 large egg
1 ½ cup flour
½ cup ground flax seed
¾ teaspoon baking soda
¾ teaspoon salt
Preheat oven to 375°F. Combine peanut butter, butter, brown sugar, milk and vanilla in large bowl. Beat at until well blended. Add egg. Beat just until blended.
Mix flour, ground flax seed, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended. Roll balls of dough into sugar. Crisscross with a fork.
Bake 8-9 minutes. Cool 2 minutes on baking sheet. Remove cookies to cooling racks to cool completely.
